World Cup Italian Meatballs with Marinara Sauce
You don’t have to choose sides with these meatball "soccer ball" preparations celebrating the Women’s World Cup match between the US and Vietnam. You can make both in advance or throw a viewing party and enlist the help of your guests. We learned a trick from Rao’s for the most tender meatballs, add water to your mix. Who knew? So cheer on your favorite team and count on both of these party snacks to be winners.
Ingredients:
- 16 OZ Pre® Ground Beef
- 1/2 pound grass fed ground pork
- 2 Eggs
- 1 C plus 2 T freshly grated parmesan cheese, divided
- 1 1/2 T chopped fresh Italian parsley
- 1 clove garlic, smashed
- 1/2 t kosher salt
- 1/4 t black pepper
- 1 1/2 C panko bread crumbs
- 1 C water
- Olive oil spray
- 1 1/2 C Rao’s marinara sauce
- 2 T fresh basil, chopped
- Preheat oven to 325°F.
- Combine the ground beef and pork in a large bowl. Add the eggs, cheese, parsley, garlic, and salt and pepper. Using your hands, blend ingredients together.
- Add the bread crumbs into the meat mixture and combine. Slowly add water until the mixture is quite moist.
- Shape the meat mixture into 1” balls and place on a parchment lined baking sheet and spray lightly with the olive oil spray (alternately, brush meatballs lightly with 1/2 T olive oil). Bake for 30-35 minutes, until internal temperature is 140°F.
- Place cooked meatballs in a serving bowl and drizzle with Rao’s marinara, sprinkle basil over top and add the remaining 2 T parmesan.
