It’s all about how you cut it. The “grain” refers to the way muscle fibers are formed. “Against the grain” means that you cut across them, which gives you a more tender bite. (Shorter muscle fibers are easier to chew.) What you go against when you buy our grass fed and finished beef.

When you open up a package of Pre beef, it is exposed to oxygen and turns bright red – that’s blooming. Because we seal our meat airtight, you get to see this beautiful transformation.

British only, such as Angus and Hereford, because they are the most tender for beef. (And we like the accent.)

A naturally occurring fatty acid that may help reduce body fat deposits and improve immune function. Our beef has up to 202mg of CLA per serving.

It looks a little off-white, right? That’s because grass naturally contains the nutrient beta-carotene, just like carrots.

Genetically modified organisms (GMOs) are living organisms (plants, animals, microorganisms) whose genetic material has been modified in a lab using genetic engineering or technology.  All our beef is guaranteed non-GMO through third-party audits in Australia and New Zealand. Phew.

The animals entire diet (excluding mother’s milk) consists of fresh or stored grasses. No grains are given at any time. Zip. Zilch. Nada.

 

Grass fed and finished is identical to 100% grass fed.

What cattle are fed during the last part of their lives.  If finished on grain, this is considered an energy-dense diet to increase weight and fat content fast.  If finished on grass, cattle will continue to graze on pasture until they reach the desired weight. (This takes longer, but it’s worth it.)

Absolutely. Positively. Always. Our suppliers use third-party certification bodies in Australia and New Zealand that inspect farms to ensure humane handling.

Omega-3s are fatty acids that may help decrease the risk of heart disease. Our beef has up to 151mg of Omega-3 per serving.

At Pre, this means cattle are raised outdoors on pasture for their lifespan.

Steaks that are too cold will not form a great sear when placed into the pan.

This is a measurement of acidity. We make sure it’s in the optimum range for color, tenderness, and juiciness.

Bluntly, it’s the red-brown liquid you find in the package after opening. This is not blood, but actually water, myoglobin (the red protein pigment found in meat), and proteins.  When water leaves the meat, the myoglobin flows out with it.

Pat the steak dry so there isn’t a boiled tasted and so we can season with salt.

When steaks and roasts rest after cooking, the juices redistribute throughout the meat and are reabsorbed, so you lose less juice when cutting. We recommend resting meat for at least 5 minutes.

We source from areas of Australia and New Zealand where grass grows year round and cattle have continuous access to graze on open pastures.

A large cut of beef. After harvesting, beef is split into primal cuts, then further divided into subprimals. We receive beef in the subprimal form, which has to meet specific requirements for trim and weight range. Definitely a punk band somewhere.

What you see is what you get – beef. Ingredients: beef. No secret chemicals or growth hormones. No misleading packaging or labeling. We have nothing to hide.
