Shepherd’s Pie
Perfect for smaller and single households, this Shepard's Pie recipe is the perfect way to use a 1 pound package of your favorite Pre ground beef. It will keep for up to 5 days in the refrigerator so you can double down on 2 classic meat and potato combos.
Ingredients:
- Heat 1T butter in a medium sauté pan, add the diced onion and cook until tender, about 4 to 5 minutes. Add the ground beef and 1/2 t salt and brown the meat, breaking it up with a mallet or wooden spoon until cooked through, about 8 minutes.
- Add the frozen vegetables to the meat in the sauté pan and cook over medium low heat, mixing to combine. Add the chicken stock, Worcestershire sauce, and pepper. Let simmer on low heat while you prepare the potato topping.
- Using a paring knife score the flesh of the potatoes and use the knife or a spoon to scoop out most of the inside of the potato. Try to leave a bit attached to the skin. Put potato flesh in a bowl and add the remaining 1 T of butter. Using a potato masher or a fork mash the potatoes but leave them a bit chunky. If potatoes are dry you can add a dash or milk or chicken stock.
- Place the ground beef and vegetable mix in a small casserole dish. Top the meat with the mashed potatoes and bake until cooked through and potatoes have begun to brown, about 30 minutes. You can use the broiler in the last 2 to 3 minutes if needed to crisp the potato topping.
