Vietnamese World Cup Meatballs with Chili Sauce
You don’t have to choose sides with these meatball "soccer ball" preparations celebrating the Women’s World Cup match between the US and Vietnam. You can make both in advance or throw a viewing party and enlist the help of your guests. We learned a trick from Rao’s for the most tender meatballs, add water to your mix. Who knew? So cheer on your favorite team and count on both of these party snacks to be winners.
Ingredients:
- 16 OZ Pre® Ground Beef
- 2 large eggs
- 3 tablespoons fish sauce
- 2 cloves garlic, minced
- 1 tablespoon finely grated fresh ginger
- ¼ teaspoon crushed red pepper flakes
- ¼ C scallions, finely chopped plus 2 T thinly sliced on the diagonal for serving
- 2 teaspoons lime zest
- ¼ C chopped fresh cilantro leaves, divided
- ¾ lb ground grass fed pork
- 1 cup panko breadcrumbs
Chili Sauce:
- 1 cup water
- 1 cup rice vinegar
- 1 cup sugar
- 2 teaspoons fresh ginger root, minced
- 2 teaspoons hot chile pepper, minced
- 2 teaspoons ketchup
- 1 teaspoon garlic, minced
- 2 teaspoons cornstarch
- 1 tablespoon water, or as need
- Or buy Trader Joe's Sweet Chili Sauce instead
- Preheat the oven to 320°F
- In a jar or measuring cup, combine the eggs, fish sauce, garlic, ginger, and red pepper flakes.
- Place the beef and pork in a large bowl and then add the scallions, lime zest, and 1/4 C of cilantro. Using your hands, mix until evenly combined then add the egg/liquid mixture and panko and mix until well blended. Roll the mixture into 1” balls and arrange on a parchment lined baking sheet.
- Bake for 30 minutes, until the internal temperature reaches 140°F
- Meanwhile, make the sauce, OR use Trader Joe's Sweet Chili Sauce
- To make sauce: Pour water and vinegar into a saucepan; bring to a boil over high heat. Stir in sugar, ginger, chile pepper, ketchup, and garlic; simmer for 5 minutes.
- Place cornstarch in a small bowl; mix in water until smooth. Whisk cornstarch mixture into chili sauce.
- Remove the saucepan from the stove; let cool.
- Serve the meatballs drizzled with the sauce and sprinkled with scallions and cilantro.
