Boil 1 ½ cups of balsamic vinegar and 3 tablespoons of sugar over medium-high heat until reduced to 1/3 cup, stirring occasionally for about 16-18 minutes.
Preheat broiler. Melt 2 tablespoons of butter in large skillet over medium-high heat. Sprinkle steaks with salt and pepper. Cook steaks for 3-4 minutes per side (medium rare), or preferred doneness.
Crumble cheese over steaks and broil until cheese melts for about one minute.
Sprinkle with pepper and drizzle balsamic over steaks.
