3 Grain-free Sweet Potato Toast Recipes

Nothing will replace a piece of freshly-baked, crispy yet soft sourdough bread, but crispy yet soft sweet potato toasts topped with thinly sliced top sirloin, herb mayo, salted tomatoes, and fresh greens will definitely curb the carb cravings.

We know that the sweet potato toast trend is not new. All your classic toast toppings have been recipe tested on a browned sweet potato plank; peanut butter, and jelly, butter, avocado to name a few. Why not top with tender, sliced top sirloin for a serving of protein for breakfast, meal-prepped lunch, or an easy dinner?

Sweet potato toasts can be made in multiple ways. As we were experimenting, the toaster oven proved to be the best and easiest way to get that "crispy on the outside and soft on the inside" feel. You can also use a regular pop toaster or roast the sweet potato planks on a sheet tray in the oven.

Everyone's toaster oven, classic toaster, or oven is different. Between Sarah Beth's, recipe developer, kitchen appliances and Pre's test kitchen toasters, we even had to change plans when it came to photoshoot day. Sarah Beth's pop toaster worked the best when she tested it at home and Pre's toaster oven worked the best when it came time to photograph. 

Here is how to make your sweet potato toasts in both a toaster oven and a classic toaster with 3 topping recipes that will satisfy those salty, sweet or starchy cravings.

Instructions for All Sweet Potato Toasts: 

  1. Scrub and peel the sweet potato. Using a large, sharp knife, slice the potato lengthwise into ¼-⅓ inch oval slices. Very lightly spray slices with cooking spray.
  2. For a regular toaster: place potato slices into bread slots and toast on the highest setting until slightly browned on the outside and soft on the inside. Most regular toasters will take 2-3 rounds.
  3. For a toaster oven: place potato slices directly onto the rack and toast on high approximately 10-15 minutes.

Sweet Potato Toasts with Marinated Beans and Top Sirloin

Ingredients:

  • 1 Pre Sirloin Steak
  • 1 large sweet potato
  • ½ cup mayo
  • 1 clove garlic, grated
  • 1 lemon juiced, 1 tsp lemon zest
  • ¼ cup chopped fresh tender herbs (ie: chives, basil, cilantro)
  • 1/4 cup oil
  • 1 can cannellini beans, drained
  1. Use a paper towel to dry sirloin and season with kosher salt on each side. Heat 1-2 Tbsps cooking oil in a skillet, and sear steak on each side 3-4 minutes for medium-rare.
  2. Remove from skillet and rest 5 minutes before slicing. Thinly slice steak against the grain and top each toast with 2-3 slices and other toppings below
  3. Mix mayo, grated garlic, 2 Tbsp lemon juice, 1 tsp lemon zest. Set aside.
  4. Gently stir drained beans, oil, the remainder of lemon juice, and herbs together. Set aside to marinate at least 15 minutes.
  5. Layer beans, steak slices, and microgreens onto sweet potato toast. Drizzle with lemon garlic mayo and garnish with more chopped herbs.

 Romesco Sweet Potato Toast with Top Sirloin

Ingredients:

  • 1 Pre Sirloin Steak
  • 1 large sweet potato
  • 1 cup roasted red peppers (canned or jarred in oil or water), finely diced
  • ¼ cup sliced almonds (toasted), finely chopped
  • 1 garlic clove, grated
  • 2 Tbsp parsley, chopped
  • Salt and Pepper
  1. Use a paper towel to dry sirloin and season with kosher salt on each side. Heat 1-2 Tbsps cooking oil in a skillet, and sear steak on each side 3-4 minutes for medium-rare.
  2. Remove from skillet and rest 5 minutes before slicing. Thinly slice steak against the grain and top each toast with 2-3 slices and other toppings below
  3. Stir together diced roasted red pepper, grated garlic clove, and almonds. Season to taste with salt and pepper.
  4. Slather red pepper mixture onto sweet potato toast and top with sliced steak. Garnish with more chopped almonds and chopped parsley.

Ingredients:

  • 1 Pre Sirloin Steak
  • 1 large sweet potato
  • ½ cup mayo
  • 1-2 Tbsp chopped fresh basil
  • 3 Lettuce leaves, cut into thin strips
  • 1 Tomato, sliced
  1. Use a paper towel to dry sirloin and season with kosher salt on each side. Heat 1-2 Tbsps cooking oil in a skillet, and sear steak on each side 3-4 minutes for medium-rare.
  2. Remove from skillet and rest 5 minutes before slicing. Thinly slice steak against the grain and top each toast with 2-3 slices and other toppings below
  3. Mix mayo and basil.
  4. Slather sweet potato toast with basil mayo and layer lettuce, tomato slices, and steak slices. Top with dollops of basil mayo and small basil leaves.
