How to cook the perfect steak in 20 minutes
Prep (about 3 minutes). Pull the steak from the fridge, pat it dry with a paper towel, and salt it liberally on all sides.
Preheat the pan. Heat a cast-iron skillet or stainless steel pan over medium-high heat, then add about a tablespoon of high-heat oil.
Cook (10 to 12 minutes for medium rare). Cook about 5 to 6 minutes per side, flipping halfway, until the internal temperature reaches 125 to 130°F.
Rest (5 minutes). Move the steak to a board and let it rest so the juices settle back into the meat.
Slice and serve. Slice against the grain, and enjoy.
