Our packaging is literally clear because we have nothing to hide. No additives, no tricks, no preservatives or chemicals. Just the highest-quality beef that’s wet aged, and vacuum sealed. Certified Paleo and Keto, Non-GMO Project Verified and Whole30 Approved.

 Our strict sourcing standards, humane animal care, and commitment to environmental sustainability ensure that every bite of Pre® beef delivers pure, premium quality you can taste and trust. Every cut comes from grass-fed and grass-finished cattle raised on open pastures, where they graze freely on nutrient-rich grasses year-round. This natural approach produces beef that’s consistently tender, flavorful, and packed with clean, high-quality protein and essential nutrients.

Sustainability

At Pre®, we believe better beef starts with better practices. Our cattle are raised on open pastures using rotational grazing that supports soil health, biodiversity, and regenerative land use. By sourcing from regions where cattle can graze year-round, we reduce reliance on feedlots and grain-based systems—lowering our environmental impact while producing clean, nutrient-rich beef that’s better for you and the planet.

Kevin Ponticelli

Chief Executive Officer

With more than 30 years of leadership experience in the food and beverage industry, Kevin Ponticelli brings a wealth of expertise in sales, marketing, and general management to Pre®. Before joining the team, Kevin served as COO and President of Mizkan American Inc., CEO of Discovery Foods, and President of both Kraft’s North American Cheese business and Kraft’s Pizza Division. He also held the role of Senior Executive Vice President at Dairy Management Inc. During his time at Kraft, Kevin helped lead the development, test marketing, and national expansion of DiGiorno Rising Crust Pizza, playing a key role in creating the iconic “It’s Not Delivery, It’s DiGiorno” campaign. A member of the Wayne State University Athletic Hall of Fame, Kevin’s competitive spirit extends beyond business. He’s a lifelong sports enthusiast and an avid fan of backyard grilling. His favorite meal? A classic cheeseburger, made with Pre® grass-fed ground beef, grilled medium rare over charcoal, topped with melted American cheese, and enjoyed with all the fixings... And, of course, an ice-cold beer.

Nicole is our savvy, tenacious CMO with a passion for real food and a love for the Pre® mission. She’s not just here for the chuck roast (though it’s the star of her legendary French onion soup), she’s here to help bring real, grass-fed and finished beef to tables across the country. With more than 20 years of experience launching and growing start-ups like Boca, Forkless Gourmet, and Natural Fitness, Nicole knows how to get things done. She’s a strategist, a creator, and a collaborator who thrives on building great experiences often on tight timelines. You’ll rarely catch her sitting still; she’s always on the move, working with partners, teammates, and customers to make big things happen. When she’s not leading the charge at Pre®, Nicole loves spending time with her family and she’s never too far from a bag of Swedish Fish.

Chief Operating Officer

Joe has been with Pre® since day one, keeping our operations running with precision, passion, and a little bit of beef geekery. As COO, he ensures every cut of Pre® beef arrives safely, on time, and at just the right temperature for that “wow, that’s tender” moment. A certified meat cutter and self-proclaimed cheeseburger enthusiast, Joe combines deep industry expertise with unmatched attention to detail. Before joining Pre®, he held key roles at Tyson, Hillshire, and Chicago Meat Authority, where he honed his skills in production optimization and sourcing. Around here, he’s not only our logistics expert, he’s also our reigning table tennis champion. When he’s not overseeing operations, you’ll find Joe biking around town, walking his energetic dog Lula, or flexing his culinary chops in the kitchen. No Michelin stars (yet), but plenty of delicious results.

Chief Sales Officer

Bob is our incredible CSO and a true advocate for sustainable animal protein. He’s passionate about helping more people discover Pre® and leads the charge in building partnerships that expand our reach and support regional growth. His dedication to quality, integrity, and responsible sourcing makes him an invaluable part of the Pre® team. With years of experience in the meat and CPG industries, Bob brings both expertise and enthusiasm to every conversation. Whether he’s introducing our brand to new partners or taste-testing a perfectly seared New York Strip, he’s always focused on delivering excellence. Outside of work, Bob enjoys spending time with his wife and four college-aged kids, cheering them on at their many activities. He’s also an avid traveler and loves taking long walks with his two dogs, Ellie and Polly.

Chief Financial Officer

Dave brings more than 30 years of financial expertise to his role as CFO, guiding Pre® with strategic insight and a steady hand. Early in his career, he worked with Kraft Foods across its U.S., Canadian, and South American businesses before taking on leadership roles in major technology and mid-sized companies including Infor (ERP), Torex (POS), bSwift (Employee Benefits), and several private equity–backed ventures. Known for his calm, thoughtful approach, Dave’s financial acumen and strategic counsel play a key role in fueling Pre®’s growth and long-term success. He’s as passionate about producing top-quality products as he is about collaborating with a smart, dedicated, and fun team. When he’s not in the boardroom, you’ll find Dave boating or fishing on Lake Michigan, catching a football game, or enjoying a weekend bike ride with family and friends, often with a perfectly cooked New York Strip waiting at the end of the day.

Controller

Jon is Pre®’s numbers guy—with plenty of personality to match. As our Controller, he brings over 12 years of financial experience and a deep passion for food (which makes him a key participant in our recipe testing sessions). Known for his attention to detail and steady approach, Jon helps keep Pre® running smoothly behind the scenes. He’s often the first to arrive at the office, usually by bike, and never misses a good table tennis match. A true outdoor enthusiast, Jon spends as much time as he can camping, cycling, or simply enjoying the fresh air. His go-to meal? Pre® chuck roast, barbacoa-style, slow-cooked to perfection and best enjoyed after a long day outside.

If you’ve ever spotted someone in Pre® gear straightening shelves and chatting with the meat manager at your local grocery store, chances are it was Jen. She’s the face of Pre® in stores, making sure every display looks great and every customer has access to the best grass-fed and finished beef around. Jen is always thinking ahead, whether she’s introducing Pre® to new retailers, organizing in-store events, or tending to our office herb garden so the team can enjoy fresh basil year-round. Her positivity, enthusiasm, and commitment to teamwork shine through in everything she does. Dedicated, dependable, and passionate about the Pre® mission, Jen makes sure our brand (and our shelves) always look their best.

Jessi is our Senior Art Director and creative powerhouse, bringing passion, energy, and plenty of black coffee to every project she touches. Whether she’s designing packaging, planning campaigns, or crafting visual storytelling for the brand, Jessi pours her heart into creating work that’s both beautiful and meaningful. With experience spanning design agencies, start-ups, and freelance projects, she brings a thoughtful, strategic eye to everything she does at Pre®. Her favorite cuts? The filet mignon, New York strip, and 92% ground beef, especially when it’s layered into nachos. Outside of work, Jessi channels her creativity into art projects, set design, body painting and gaming. She’s loves to learn, grow, and eat good food with good company.

Logistics & Supply Chain Manager

Chantz keeps Pre® running efficiently from pasture to plate. As our Supply Chain Manager, he ensures we’re making smart, strategic decisions in production, logistics, and warehousing, keeping everything on track so our premium beef gets where it needs to go, perfectly and on time. With a strong background in logistics and a knack for problem-solving, Chantz is an invaluable member of our Operations team. When he’s not optimizing supply chains, he’s likely in the kitchen perfecting his favorite Pre® cut, the ribeye, reverse-seared to juicy perfection. A true foodie, Chantz loves exploring Chicago’s vibrant dining scene, discovering new restaurants, and pairing great meals with equally great craft beer.

Content & Production Manager

Shaun is the creative force behind how Pre® shows up in the world. As our Content and Production Manager, he brings stories to life through compelling visuals, engaging videos, and thoughtful content strategies—making sure the brand always looks (and sounds) its best. With over 14 years of experience in media and storytelling, Shaun has produced and hosted a wide range of creative projects, from podcasts to videos and animations. Before joining Pre®, he helped build brand awareness for acclaimed podcasts like The Distance and Rework at 37signals, earning a reputation as a dynamic, forward-thinking content creator. When he’s not behind the camera or editing suite, you’ll find Shaun firing up the smoker for BBQ competitions, grilling with friends, or diving into a Dungeons & Dragons campaign. His go-to Pre® cut is the chuck roast, though he’ll always have a soft spot for a classic Big Mac—a nostalgic nod to his love of simple, satisfying food done right.

Sr Director of Business Development

Paula is our bright, bold Senior Director of Business Development and she has a well-earned reputation for being the best at what she does. With extensive experience across food brands both big and small, Paula has helped each one grow stronger, faster, and smarter. Her leadership, energy, and deep industry knowledge make her a driving force behind Pre®’s continued success. When she’s not building relationships and opening new opportunities for the brand, you can probably find Paula at the beach with friends and family, or in the kitchen bringing her family’s old Italian recipes to life (something the whole Pre® team loves, too). If you were cooking for Paula, she’d go for a filet mignon, black and blue, followed by a chocolate dessert of any kind, any size, and preferably paired with more chocolate.

Quality Manager

Julie is really into food. Some might argue too much (we wouldn’t though, she is a Food Scientist after all). She’s our Food Safety and Quality Manager and we know our beef is in good hands. Whether she is ensuring our production process is top-notch, testing new products (and we don’t mean JUST taste testing) or talking directly with consumers about our delicious beef, her goal is always the same: deliver the highest quality product, taste, and experience every single time. She knows how things work, why they work, and how to make them work better. And she can tell you all the reasons why bread tastes better toasted. Julie has been named one of Progressive Grocer’s 2018 GenNext Award winners and has worked in the food industry for over 10 years with companies like Hillshire Brands and Tyson Foods before finding her way to Pre in search of a better-for-you option. Outside of work, Julie loves cooking, doing yoga, reading, and spending quality time with her husband and 3 wild, wonderful, and food-loving kids.

Senior Accountant

James is our Senior Accountant and resident money-crunching extraordinaire. A true team player with endless positivity and drive, he keeps Pre®’s finances running smoothly and supports the team with precision and good humor. His dedication to detail and enthusiasm for helping the brand grow make him an invaluable part of the crew. When he’s not balancing numbers, James can usually be found spending time with his family of five, exploring forest preserves, biking, gardening, or staying active in his church community. He’s a fan of dry comedy, good conversation, or no conversation at all (either way, you’re good in his book). James’s go-to meal? A juicy Pre® ribeye, perfectly seared, followed by a round of salmon sashimi or nigiri. His idea of the perfect reward after a long week.
