Safety tips while you grill steak

  1. Use aluminum foil under drippy foods like bacon, so it catches all the mess.

  2. Use separate trays for raw and cooked products.

  3. Keep your grill clean, so the flavors stay delicious and no food debris catches fire.

  4. Use a grill glove or towels to carry hot trays and to open and close the grill.


Should I use a charcoal or a gas grill for steak?

Charcoal gives food an amazing smoky flavor, and it is a classic reason many grillers prefer it. It takes a little longer to start and a little more cleanup, but you can create custom hot spots and cool spots for cooking different foods at the same time.


Gas is great because you can get going right away. There is no fussing with a chimney, just push a button and go. The heat can be uneven, with hot and cool spots, and you get slightly less smoky flavor. It is not hard to use once you learn the heat spots on your grates.

How to cook steak on the grill: temps and times by cut

All steaks are unique, so they cook a little differently. Pay attention to their needs, but do not over-handle them. You would cook a New York strip differently than a filet mignon. For the perfect steak, always use an instant-read thermometer and cook to the chart below. Pull the steak about 5°F under your target and let carryover heat finish the job during the rest. Is it better to grill steak on charcoal or gas?

How long do I grill a steak?

Cook to temperature, not to the clock. For medium rare, the starting point is 5 to 6 minutes per side, with a target of 125 to 130°F. Pull the steak about 5°F early and let it rest.


Should I oil the grates?

Yes, especially for lean cuts like filet mignon, which can stick. A clean, oiled grate helps you get a clean sear and an easy flip.


How long should grilled steak rest?

At least 5 minutes. Resting lets the juices settle back into the meat, and carryover heat finishes the cook.
