    1. Pull the steak from your fridge.

    2. Pat dry with a paper towel and salt liberally on all sides.

    3. Preheat a cast-iron skillet or stainless steel pan over medium-high heat.

    4. Add about a tablespoon of high-heat cooking oil to your pan.

    5. Cook to your desired temperature (see chart below), flipping half-way through.

    6. Take it out of the pan and let it rest for at least 5 minutes before slicing.

  • Always insert your meat thermometer into the center of the steak for the most accurate readings.
