Whole30 Steak Cobb Salad

Cobb salad is a classic. Add in seasonal veggies, a cheese, some bacon and in this case, steak. Top with a bright, crisp vinaigrette.

Ingredients:

  • 2 Pre Top Sirloin Steaks
  • 2 tsp kosher salt
  • 2 tbsp high temp cooking oil
  • ½ pound bacon
  • 1 head romaine lettuce
  • 2-3 handfuls tender, baby greens
  • 1 pint cherry tomatoes, halved
  • 1/2 large red onion, finely diced 
  • 2-3 radishes, thinly sliced
  • 2-3 ounces blue cheese, crumbled (optional)
  • Green onion, thinly sliced for garnish
  • 3 medium boiled eggs, peeled and sliced (optional)
Vinaigrette: 
  • 5 ounces (150 ml) canola or olive oil
  • 1.5 ounces (50 ml) red wine vinaigrette
  • 1 tsp dijon mustard
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 4 tbsp fresh herbs (basil, thyme, oregano, dill, rosemary are all recommended)
  • 1 tbsp good honey (optional)
  1. Remove steak from the refrigerator 15-20 minutes before cooking and allow it to come to room temperature. Season with salt just before cooking. 

  2. Preheat oven to 350°.  Line a baking sheet with parchment or aluminum foil. Spread bacon strips out individually on the baking sheet. Do not crowd.
  3. Bake for 15 minutes, carefully flip strips with tongs and bake for an additional 5 minutes. Remove from oven, allow to cool, and transfer to paper towel-lined plates. Chop into bite-size pieces before adding to the salad. 

  4. Rinse romaine leaves and use clean hands to tear leaves into bite-size pieces. Mix romaine and tender greens in a large bowl as a base for the salad.

  5. Heat oil in a cast-iron skillet over medium-high heat. When a drop of water sizzles in the pan, add the salted steak and do not disturb for 4 minutes. Flip and cook on the second side for 4 minutes or until it reaches your desired doneness. Use our Steak Temperature Chart for reference.
  6. Remove from pan and allow to rest 5 minutes. Slice against the grain into thin slices. 

  7. Arrange toppings on greens in sections around salad bowl with steak slices in the center. 

  8. Combine all dressing ingredients in a mason jar or resealable container. Close and shake vigorously for 15 seconds. Pour dressing over salad just before serving.
