Spicy Steak Crispy Rice

Who doesn’t love a crunchy spicy tuna sushi roll… elevate it with steak! Have fun with this recipe, and add any toppings that your heart desires! We took the viral crunchy spicy tuna sushi roll recipe and tweaked it to work with our beloved New York Strip steak, and dare we say; it’s more delicious than the tuna version. 

ACTIVE: 20 min. PASSIVE: 1 hr. DIFFICULTY Medium

Ingredients:

  • 1 New York Strip Steak
  • Spicy Mayo
  • Two large Avocados
  • Sesame Seeds
  • Chives
  • Soy Sauce for serving

Sushi rice: 

  • 2 cups dry Sushi Rice 
  • 2 cups rice
  • 3 cups water
  • ½ cup rice vinegar  
  • ¼ cup white sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
    1. For the sushi:
    2. Rinse your rice in a colander until the water coming out is clear
    3. Combine rice and water in a pot and bring it to a boil. After the water starts to boil, reduce heat to low and cover. Cook until your rice is tender and all water has been absorbed, this takes about 20 minutes (you might need to add more water if your rice starts to burn).
    4. As you wait for your rice to cook, combine rice vinegar, oil, sugar, and salt in a saucepan over medium heat. Cook until the sugar has completely dissolved. Allow this liquid to cool and then stir into the cooked rice. Keep mixing the liquid even if it seems wet as it will make the rice extra sticky!
    5. Let the rice cool completely before making the sushi as it will be easier to handle. At least 20 minutes but ideally, place it in the fridge and let it completely cool!
    6. For the Crunchy Spicy Steak Sushi Roll:
    7. Cook your New York Strip steak to your preferred temperature but we suggest medium rare for this recipe, set it aside and let it cool.
    8. As your steak cools, make the crunchy rice cubes. Flatten your rice and make sure it is not thicker than one inch and cut it into small cubes (1 inch by 1 inch)
    9. Add high heat oil to a non-stick pan and fry your rice cubes until they are golden brown.
    10. Remove them from the pan and set them aside.
    11. Put a little bit of spicy mayo on each cube of rice and then top it with a thinly sliced piece of steak. Then add avocado and sprinkle your sushi with chives and sesame seeds!
