Coconut Curry Beef Nachos

Nachos but make them healthy! These Coconut Curry Beef Nachos are jam packed with protein and delicious flavor. You can make these for a quick and healthy snack as everyone (even kids) would love the delicious flavors. We used the Coconut Curry Chickpeas from Beanvivo, they add the perfect curry flavor to these Coconut Curry Beef Nachos. 



    1. Cook the ground beef until it is almost done add a few sprinkles of salt and pepper, add in the Coconut Curry Chickpeas and cook until the chickpeas are warm and the beef is fully cooked through
    2. On a plate, lay out tortilla chips and place the ground beef and Coconut Curry Chickpeas on top. Quickly sprinkle the cheese on so that it melts! Alternatively, you can place the tortilla chips on a baking pan with the ground beef and Coconut Curry Chickpea mix with cheese on top and place it into the oven at 350 degrees Fahrenheit to crisp up the chips and ensure your cheese is extra gooey!
    3. Add any toppings that you would like. We added more shredded cheese, avocado, white onion, jalepeno, and cilantro for serving!
