Whole30 Chimichurri Steak & Potato Kabobs

Ingredients:
- 2 Pre Grass-Fed & Finished Top Sirloin Steaks, diced into 1-inch cubes or Petite Sirloin Steaks
- 18-24 baby potatoes, about 1-inch in diameter
- 1 red bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into 1-inch pieces
- kosher salt & ground black pepper
- 6-8 small bamboo skewers, soaked in water at least 20 minutes prior to assembly
PWWB Chimichurri:
- 1/2 cup each cilantro & parsley
- 3 tablespoons fresh oregano
- 1 lemon, zested & juiced
- 3-4 cloves garlic
- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon crushed red pepper flake
- 1 1/2 teaspoons kosher salt
- PAR-BOIL: Place the potatoes in a pot. Cover by 1-2 inches in cold water. Season with 2 tsp kosher salt. Bring to a boil, then boil the potatoes for 5-7 minutes, or just until fork-tender. Drain & set aside.
- CHIMICHURRI: Add all listed ingredients to a food processor. Pulse to combine. Taste and season with additional salt or ground black pepper. Set aside, or store in an airtight container in the refrigerator for up to 1 week.
- ASSEMBLE: Thread each skewer with potato, top sirloin & red onion, alternating as you go. Pour 1/2 of the prepared chimichurri over the skewers, using your hands to ensure each skewer is nicely coated in chimichurri sauce.
- GRILL: Grill the skewers over medium-high direct heat (500-600 degrees F) for 3 minutes per side for medium doneness - add or subtract a minute of cooking time per side if you prefer your steak more/less done.
- SERVE: Remove the skewers from the grill. Rest for 2-3 minutes before serving. Serve with reserved chimichurri.
