Whole30 Italian Sous Vide Beef Egg Bites

Looking for an on-the-go breakfast that can be easily prepped ahead and stay delicious all week long? These egg bites are packed full of protein, veggies, and healthy fats to start your day right.

Ingredients:

  • 1 to 2 tbsp fat (ghee, butter or olive oil work great!)
  • 1 lb Pre 85% Lean Ground Beef
  • 1 tbsp onion powder
  • 1 tbsp oregano (dried)
  • 2 tsp thyme (dried)
  • 2 tsp rosemary (dried)
  • 2 tsp garlic powder
  • 2 tsp cumin (ground)
  • 2 tsp coriander (ground)
  • 4 oz sundried tomatoes, diced (packed in oil)
  • 12 eggs
  • 1 15 oz. can Coconut Cream
Equipment: 
  • Immersion Circulator or Blender
  • 12 Weck 976 Mini Mold Jar
  • Sous Vide
  1. Place the oil or ghee in a frying pan over medium heat.
  2. Once the oil or ghee is warm, add ground beef and let cook for around 5 minutes until brown, stirring occasionally.
  3. Add all the spices and sundried tomatoes, stirring until the mixture becomes fragrant, about 1 minute. Add salt and pepper to taste. Remove from heat, and let the mixture stand.
  4. Next, while the ground beef is cooking, combine a dozen eggs and coconut cream into a blender and mix on the lowest speed until just combined, trying to avoid frothing (creating bubbles) the mixture. Season with the same amount of salt and pepper as used in the ground beef mixture.
  5. Liberally grease 12 jars with oil or ghee. Whole30® Approved spray oils or ghee are great for this.
  6. Divide evenly ground beef mixture evenly between 12 jars.
  7. Next, divide egg mixture evenly into the jars with ground beef.
  8. Submerse jars in a water bath with an immersion circulator set to 172 degrees. Cook for 1 hour 30 minutes.
Extra Tips:
  1. Egg bites can be stored in the refrigerator in the jar.
  2. To reheat, remove lid and cook in oven for 10 minutes on 325.
