Preheat grill to high heat, scraping grates to clean and applying a small amount of cooking spray to season for a non-stick cook
While grill is heating, let PRE beef sit at room temperature for about 20 minutes, then form into 8-12 slider sized patties. season both sides with salt and pepper
Grill slider burgers 3 minutes per side, then turn the grill off, evenly top each slider with cheese, close grill lid and let cheese melt.
While cheese melts, make the aioli. Combine mayo, Dijon, lemon juice, minced garlic, and chopped bacon until evenly incorporated. Season with salt & pepper.
Let’s assemble! Spread bottom bun with ketchup, and add lettuce, slider, tomato, and a dollop of the bacon aioli, and close with top bun. Serve hot and enjoy!
