Stuffed Halloween Peppers

Stuffed peppers are a dish we love- and are loaded with good stuff! No matter how you celebrate Halloween, be sure to get something nutritious in your little ones (and yourself!) before the sugar hits. 

ACTIVE: 10 min. PASSIVE: 20 min. DIFFICULTY Medium

Ingredients:

  • 6 bell peppers
  • a drizzle of olive oil
  • 1 small yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 pound Pre® 95% lean ground beef
  • 1 tsp taco or fajita seasoning
  • 1/2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (4 ounce) diced green chiles
  • 2 cups cooked rice of choice
  • 1 can (14.5 ounces) diced tomatoes (drained)
  • 1 (8 ounce) can tomato sauce (divided)
  • 1/2 cup shredded Mexican-style cheese
  • fresh chopped parsley for garnish
  1. Preheat oven to 350°F
  2. Prep peppers: carefully cut off tops, then clean out insides, removing any seeds, etc. Then with a small knife, carve peppers as desired. Set aside.
  3. Next, in a large skillet, heat a drizzle of oil over medium heat. Add onion and sauté for 3- 4 min.
  4. Add garlic and cook for another 1- 2 mins.
  5. Add in ground beef and cook. Using a spatula break up the meat as you brown/cook.
  6. Once browned, add in taco or fajita seasoning, chili powder, cumin, green chilis, tomatoes, half the tomato sauce, and rice.
  7. Cook stove top for several minutes until everything is warm and well-incorporated.
  8. Then, carefully spoon mixture into peppers and place in an oven-safe dish, standing upright.
  9. Bake for 15- 20 min. Then, add a small amount of tomato sauce (reserved half) to each, and top with cheese.
  10. Return to oven and bake for an additional 5 min.
  11. Once done, garnish with parsley, as desired , and enjoy!
