Stuffed Halloween Peppers
Stuffed peppers are a dish we love- and are loaded with good stuff! No matter how you celebrate Halloween, be sure to get something nutritious in your little ones (and yourself!) before the sugar hits.
Ingredients:
- 6 bell peppers
- a drizzle of olive oil
- 1 small yellow onion (finely chopped)
- 3 cloves garlic (minced)
- 1 pound Pre® 95% lean ground beef
- 1 tsp taco or fajita seasoning
- 1/2 tbsp chili powder
- 1 tsp ground cumin
- 1 can (4 ounce) diced green chiles
- 2 cups cooked rice of choice
- 1 can (14.5 ounces) diced tomatoes (drained)
- 1 (8 ounce) can tomato sauce (divided)
- 1/2 cup shredded Mexican-style cheese
- fresh chopped parsley for garnish
- Preheat oven to 350°F
- Prep peppers: carefully cut off tops, then clean out insides, removing any seeds, etc. Then with a small knife, carve peppers as desired. Set aside.
- Next, in a large skillet, heat a drizzle of oil over medium heat. Add onion and sauté for 3- 4 min.
- Add garlic and cook for another 1- 2 mins.
- Add in ground beef and cook. Using a spatula break up the meat as you brown/cook.
- Once browned, add in taco or fajita seasoning, chili powder, cumin, green chilis, tomatoes, half the tomato sauce, and rice.
- Cook stove top for several minutes until everything is warm and well-incorporated.
- Then, carefully spoon mixture into peppers and place in an oven-safe dish, standing upright.
- Bake for 15- 20 min. Then, add a small amount of tomato sauce (reserved half) to each, and top with cheese.
- Return to oven and bake for an additional 5 min.
- Once done, garnish with parsley, as desired , and enjoy!
