Southwestern Layered Salad With Elote Dressing
Layer all of the favorite taco party ingredients to create this festive salad.
Salad Ingredients:
- 1 16 OZ Pre ground beef
- 1 t cooking oil
- 1 pouch Frontera brand beef taco seasoning sauce
- I head chopped romaine lettuce
- 1/2 C sliced red radishes
- 1 C canned rinsed black beans, blotted dry on paper towel
- 1 C defrosted frozen corn, blotted dry on paper towel
- 1 large cucumber, seeded and chopped
- 1 pint red cherry tomatoes, cut in half
- 1 C shredded Mexican blend cheese
- 3/4 C sliced black olives
- 1 packet tortilla strips
- 2 medium diced avocados
Elote Dressing:
- 1 C mayonnaise
- 1 C sour cream
- 1/2 C chopped cilantro
- 2 T chili powder
- 2 cloves mashed garlic
- 4 T freshly squeezed lime juice (about 2 limes)
- 2 chopped scallions
- 1 T apple cider vinegar
- 2 t powdered sugar
- 1 t kosher salt
- Place dressing ingredients in a mini food processor and blend until combined. Set aside.
- Heat oil in a sauté pan over medium high heat. Add ground beef, breaking it up with a mallet or wooden spoon. Cook for 4-5 minutes then add Frontera taco seasoning and cook, about 10 minutes total. Add 3/4 C prepared dressing to the ground beef and stir to combine. Remove from heat and let cool while preparing the rest of the salad ingredients.
- In a large glass bowl, assemble the layers of the salad.
- Place the chopped lettuce on the bottom of the bowl, followed by the remaining ingredients in the order listed above, radishes, beans, corn, cucumber, tomatoes, then drizzle half of the remaining dressing over the tomatoes.
- Top with sliced olives, tortilla strips, and avocados. To serve salad, use 2 long handled serving spoons to scoop salad vertically from the bowl so each serving is getting all of the layers. Serve remaining dressing on the side.
