Soda Braised Nachos

ACTIVE: 15 min. PASSIVE: 2 hrs. DIFFICULTY Easy

Ingredients:

  • 1 Pre Brands Pre chuck roast
  • 1 32 ounce Pre chuck roast
  • 2 tsp kosher salt
  • 2 tbs high heat oil, such as grapeseed
  • 1 medium yellow onion, diced
  • 6 cloves garlic, minced
  • 2 medium carrots, diced
  • 1/4 cup whole pepperoncinis
  • 2 tbs tomato paste
  • 1/4 cup low sodium soy sauce
  • 1 tsp paprika
  • 1 cup chicken stock
  • 3 cups cherry cola
  • Favorite brand store bought tortilla chips
Fixin's: 
  • Chopped cilantro
  • Pickled or raw jalapeño
  • Pickled or raw sliced red onion
  • Pico de Gallo or salsa
  • Queso blanco
  • Fresh lime wedges
    1. Preheat oven to 300°F.
    2. Preheat a dutch oven, over medium high heat on the stove.
    3. Cut the chuck roast in to 8 equal sized pieces, season with salt on all sides. Add the oil to the dutch oven and sear until golden brown, about 4-5 minutes on all sides.
    4. Remove the meat from the pan and set aside. Add onions, garlic, carrot, and pepperoncini, saute, stirring, until vegetables begin to soften, about 5 to 6 minutes.
    5. Add the tomato paste, soy sauce, and paprika and stir until smooth.
    6. Add the stock and the soda and return the meat to the pan. Bring to a simmer then cover the pan with a lid and place in oven.
    7. Braise for 2 hours just add more stock as needed if cooking over 2 hours) until fork tender. If it cooks longer be sure to check liquid levels are not too low and add more stock as needed.
    8. Remove the roast from the braising liquid, discard the liquid.
    9. To serve, shred roast with 2 forks into bite size pieces. Spread tortilla chips on a serving platter or sheet pan, top with shredded beef and top with your add ons.
