Shrimp & Beef Egg Rolls in the Air Fryer

Superbowl air fryer munchies are what we are all about lately, especially these ones, they are super tasty and crunchy, and the dip adds that perfect final touch while watching those touchdowns!

  • 80% or 85% Pre Ground beef- 1 lb.
  • Shrimp, raw - .75 lb
  • Ginger - l inch, grated
  • Garlic - 3 cloves, minced
  • Scallion - 1 bunch, minced
  • Cilantro- 1 bunch, minced
  • Shiitakes- 8 oz
  • Soy or coconut aminos- .25 cup
  • Corn starch, 1 tbsp
  • Cold water, 1 tbsp
  • Egg roll wraps, about 18
  • 1 egg, beaten
  • Spray oil
  • Sweet chili sauce
  1. In your food processor, pulse shiitakes until roughly chopped. Meanwhile, preheat a large skillet with some cooking oil over medium high heat. Brown the ground beef while breaking it up with a spoon. Once the beef is mostly browned, add in chopping shiitakes, garlic, ginger, herbs and coconut aminos. Use a fork, a small whisk or your finger to combine the cornstarch and water. Add the cornstarch slurry to the mushroom and beef mixture and mix well.
  2. While the beef and mushrooms are cooking, pulse shrimp until roughly chopped. Turn off the heat add in the chopped shrimp, breaking up the chopped shrimp into small pieces. The heat from the beef and mushrooms will be enough to cook the shrimp. Once the shrimp turn pink, transfer mixture onto a shallow dish or sheet tray and allow to cool in the fridge or freezer before assembling the egg rolls.
  3. To assemble the egg rolls, place an egg roll wrapper on your cutting board so it looks like a diamond. Add a few tablespoons of filling to the center of the diamond, use your finger or a pastry brush to paint a small amount of beaten egg to the corners. To seal the egg roll, tuck the left and right corners in toward each other. Take the bottom corner and tuck it toward the center and roll the egg roll away to finish. Place egg roll seam side down on a baking tray.
  4. To air fry, spray a small amount of oil in your air fryer basket and over the tops of the egg rolls. Air fry for 10 minutes at 400f, flipping the egg rolls midway through. Serve with sweet chili sauce and enjoy!
