Rustic Chuck Roast
The best of old and new. Grass fed and finished Pre Chuck Roast with simple ingredients and a cauliflower mash.
Ingredients:
- 1 1/2 lbs. Pre Chuck Roast
- 1/2 tsp. sea salt
- 1 tbsp. Herbs de Provence
- 1 tsp. garlic (granulated)
- 2 tbsp. olive oil
- 1 cup coarse leek (chopped)
- 1 cup coarse carrots (chopped)
- Preheat oven to 320F. Rub roast with olive oil, salt, herbs, and garlic.
- Place chopped veggies on sheet pan in the center of oven. Put beef over veggies and roast for 45 minutes.
- Remove from oven and sear on hot cast iron skillet for 2 minutes per side.
- Let beef rest for 5 minutes before slicing. Serve on top of cauliflower mash.
