Rustic Chuck Roast

The best of old and new. Grass fed and finished Pre Chuck Roast with simple ingredients and a cauliflower mash.

Ingredients:

  • 1 1/2 lbs. Pre Chuck Roast
  • 1/2 tsp. sea salt
  • 1 tbsp. Herbs de Provence
  • 1 tsp. garlic (granulated)
  • 2 tbsp. olive oil
  • 1 cup coarse leek (chopped)
  • 1 cup coarse carrots (chopped)
  1. Preheat oven to 320F. Rub roast with olive oil, salt, herbs, and garlic.
  2. Place chopped veggies on sheet pan in the center of oven. Put beef over veggies and roast for 45 minutes.
  3. Remove from oven and sear on hot cast iron skillet for 2 minutes per side.
  4. Let beef rest for 5 minutes before slicing. Serve on top of cauliflower mash.
  5. Enjoy!
