Rosemary Beef Apple Slices
These fall-inspired apple bites are a perfect starter to any gathering or a great snack to keep in your fridge when you crave something sweet and savory. The crunch of the apple and tenderness of the beef are a satisfying combination and make every bite easy and delicious.
Ingredients
- 1 Pre 92% Lean Ground Beef
- 1 tsp salt
- 1 shallot, minced
- 1 clove garlic, minced
- 1 tsp apple cider vinegar
- 5 sprigs fresh rosemary, removed from stem and minced
- 3 Sweet Apples (golden, gala, honey crisp)
- 1 package sugar-free uncured bacon
- toothpicks
Let's cook this
- Preheat oven to 400F. Place bacon in a single layer on a roasting rack or directly onto parchment. Cook the bacon until the desired doneness but still flexible enough to bend around the apple. About 8-10 minutes.
- While bacon is cooking, make the beef.
- In a large skillet over medium-high heat, start to brown the beef and add salt.
- Remove beef with a slotted spoon. In the same pan, over medium heat sauté shallots, garlic, and rosemary until the shallots are soft and caramelized. Add beef back in and stir until combined. Turn heat off and set aside.
- Remove bacon from oven.
- Slice apples into flat, 2-3 bite slices. About 1/2" thick. Should make about 25-30 slices. Cut apple right before you assemble and serve to make sure they don't turn brown. If you would like to slice ahead of time, keep the apple sliced in cold water.
- Place a tbsp of beef mixture onto each apple. wrap 1/2 piece of bacon around the apple and stick with a toothpick.
- Assemble on a platter and sprinkle with extra rosemary. Enjoy within about 15-20 minutes of plating.
