Roasted Potatoes with Sweet Peppers and Onions and Steak

This potato dish will complement any steak. The leftovers will also make a great breakfast or brunch potatoes or hash browns paired with fried or scrambled eggs.

  • 1 Pre Brands Filet Mignon cooked to your desired doneness
  • 2 pounds small to medium sized red skinned potatoes, 1” dice
  • 1 t kosher salt
  • 1 small red bell pepper, 1/2” dice
  • 1 small sweet onion 1/2” dice
  • 1 T olive oil
  • 1/2 t black pepper
  • 1 heaping T flat leaf parsley or any of your favorite fresh green herb, roughly chopped
    1. Preheat your oven to 425°F.
    2. Toss all ingredients except fresh herbs in a large bowl to coat evenly.
    3. Place in a single layer on a large baking pan.
    4. Roast in the oven for 20 minutes, testing doneness by piercing with a fork.
    5. Transfer to a serving dish and garnish with fresh chopped herbs.
