Quinoa Beef Bites

You can use these beefy quinoa minis in endless ways. Made with 95% lean ground beef, they're light on fat not on flavor.

Ingredients:

  • 1 lb. Pre Lean Ground Beef
  • 1 cup quinoa (uncooked)
  • 1 ½ cup water
  • 1 tsp. olive oil
  • ½ tsp. salt
  • ½ tsp. cumin
  • 1 cup kale (chopped)
  • ¼ cup carrots (grated)
  • ¼ purple cabbage (shredded)
  • 3 egg whites
  • 1 tbsp. fish sauce
  • 1 tbsp. Coconut Aminos
  • 1 tsp. salt
  • ½ tsp. white pepper
  • 1 tsp. ground ginger
  • 1 tsp. ground mustard seeds

Instructions:

  1. Heat olive oil in a two-quart pot. Add quinoa and salt. Toast the seeds, stirring often for three minutes. Add in water and bring to boil.
  2. Lower heat to medium and cover partially with a lid. Let simmer until water is evaporated. Spread quinoa out on a sheet pan to cool quickly.
  3. In a large bowl, mix chopped vegetables and seasoning. Add quinoa and mix thoroughly.
  4. Add ground beef and mix well. Add egg whites and mix until well combined.
  5. Shape sixteen, 1-inch patties. Place on parchment paper-lined baking sheet. Bake at 400F for 20 minutes.
  6. Serve over greens or alone. Enjoy!
