Quinoa Beef Bites
You can use these beefy quinoa minis in endless ways. Made with 95% lean ground beef, they're light on fat not on flavor.
Ingredients:
- 1 lb. Pre Lean Ground Beef
- 1 cup quinoa (uncooked)
- 1 ½ cup water
- 1 tsp. olive oil
- ½ tsp. salt
- ½ tsp. cumin
- 1 cup kale (chopped)
- ¼ cup carrots (grated)
- ¼ purple cabbage (shredded)
- 3 egg whites
- 1 tbsp. fish sauce
- 1 tbsp. Coconut Aminos
- 1 tsp. salt
- ½ tsp. white pepper
- 1 tsp. ground ginger
- 1 tsp. ground mustard seeds
Instructions:
- Heat olive oil in a two-quart pot. Add quinoa and salt. Toast the seeds, stirring often for three minutes. Add in water and bring to boil.
- Lower heat to medium and cover partially with a lid. Let simmer until water is evaporated. Spread quinoa out on a sheet pan to cool quickly.
- In a large bowl, mix chopped vegetables and seasoning. Add quinoa and mix thoroughly.
- Add ground beef and mix well. Add egg whites and mix until well combined.
- Shape sixteen, 1-inch patties. Place on parchment paper-lined baking sheet. Bake at 400F for 20 minutes.
- Serve over greens or alone. Enjoy!
