Pumpkin Cheddar Dip with Steak Skewers

Top Sirloin skewers get a warm Fall accessory – homemade fondue with pumpkin, Amber lager and 2 kinds of cheddar.

  • 1 Pre Top Sirloin Steak
  • 1 cup mashed pumpkin
  • 2 tbsp. ghee or butter
  • 1 tsp. cassava flour
  • 1 cup leeks (sliced)
  • 1 bottle Amber lager
  • ½ tsp. salt
  • 1 tsp. mustard powder
  • ¼ tsp. nutmeg
  • 1/3 lb. horseradish cheddar (shredded)
  • ½ lb. cheddar (shredded)


  1. In a six-quart pot, heat 1 tablespoon of ghee. Add sliced leeks and sauté until tender. Remove leeks and place in a blender with the pumpkin and six ounces of beer. Blend until smooth.
  2. In the pot, melt one tablespoon of ghee on medium heat. Whisk in cassava flour until light brown. Add remaining beer and continue whisking, then include pumpkin mix and continue mixing. Bring pumpkin-beer mix to a simmer.
  3. Add in seasoning, then horseradish cheese. Gradually add cheese, one cup at a time, until dissolved. Keep dip warm until ready to serve.
  4. Garnish with chives and serve with PRE steak, fresh fruit, or veggies.
  5. Enjoy!
