French Onion Soup

Traditional French onion soup doesn't have beef. We thought that was sad, so we created this recipe and you'll never go back.

  • 1 Pre Chuck Roast, dried and cubed
  • 4 large onions, sliced thinly
  • 3 tbsp. grass-fed butter
  • 1 tbsp. olive oil
  • 5 c. vegetable stock
  • 2 bay leaves
  • 1 tsp. dried sage
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 4 thick slices of French bread
  • 4 slices Gruyere cheese
  1. Turn the Instant Pot to sauté.
  2. Sauté onions, butter and olive oil until onions are soft and caramelized.
  3. Add chuck roast cubes, vegetable stock, bay leaves, sage, oregano, salt and pepper.
  4. Attach lid and set valve to "sealing". Push the "manual" button and set timer for 45 minutes.
  5. When ready, let pressure release by turning valve to "venting." Be careful of hot steam.
  6. Remove lid and shred beef with two forks. Return to pot.
  7. Toast French bread slices.
  8. Wipe insides of an oven safe bowl with olive oil, add a slice of bread to the bottom of the bowl, and ladle soup on top.
  9. Turn your oven broiler on. Place cheese slices over the soup and broil in the oven until cheese is browned and melted.
  10. Serve immediately. Enjoy!
