Paleo Sweet Potato Nachos

Substitute russet potatoes for sweet potatoes for Paleo nachos you'll love, even if you're not Paleo.

Seasoned Beef:

  • 1 lb. Pre® ground beef
  • 2-3 tbsp. taco seasoning (see recipe below)
  • 1 tbsp. cilantro (chopped)
  • 1 jalapeno
  • Taco Seasoning
Taco Seasoning: 
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. cumin
  • ½ tsp. cayenne pepper
  • 1/8 tsp. paprika
  • pinch of oregano
Baked Potato Chips
  • 4 small russet potatoes
  • 1 medium sweet potato
  • 2 tbsp. olive oil
  • ½ tsp. salt
  1. Baked Potato Chips: Preheat oven to 425F. Wash and dry potatoes, then thinly cut into 1/8 inch slices with knife.
  2. Pat each slice with paper towel to remove excess moisture, then toss with salt and oil.
  3. Lay potatoes flat on baking sheet and bake for 7-9 minutes, making sure to flip the potatoes over halfway through cooking time. Once the chips are a golden brown color, remove from the oven and lay on a cooling rack.
    Once chips are ready, top with seasoned ground beef, veggies, salsa, or avocado.
  4. Beef and Taco Seasoning: Remove seeds from jalapeno and thinly slice. Brown beef and taco seasoning over medium heat, then add jalapeno.
  5. Cook beef and taco seasoning ingredients together for another 5-6 minutes or until beef is cooking fully through. Drain excess grease and stir cilantro.
