Beef in a Blanket

Use this easy recipe for school lunches, tailgating, or snacks! The seasoning really makes these bite-sized "hotdogs" kid-friendly and fun for the entire family to make together.Simply roll the meat into hotdog shaped rolls and bake. Make a batch and freeze fora healthy snack anytime! P.S. They’re NOT just for the kiddos!

ACTIVE: 20 min. PASSIVE: 40 min. DIFFICULTY Medium

Ingredients:

  • 1 16 OZ package of Pre 85% ground beef
  • 2 T dried, minced onion, divided
  • 1 t garlic powder
  • 1/2 t ground coriander
  • 1/4 t paprika
  • 1/4 t dry mustard
  • Pinch of marjoram
  • Pinch of mace
  • 1/8 t curing salt or 1/2 t kosher salt
  • 1/4 t celery seed
  • 1 t sugar
  • 1/4 t white pepper
  • 1 t liquid smoke
  • 1 package of crescent roll dough
  • 1 T poppy seeds
  • 1 T sesame seeds
  • 1 t celery salt
  • 1 large egg, beaten
Sauce: 
  • Food processor
  • Kabob gun (optional)
  • Parchment paper
  1. Preheat oven to 325°F.
  2. Blot meat dry and place in the bowl of a food processor, breaking it into 3 inch pieces for easier mixing.
  3. Add ingredients: 1 T of the dried, minced onion, the garlic powder, coriander, paprika, dry mustard, marjoram, mace, curing salt (or 1/2 t kosher salt), celery seed, sugar, white pepper and liquid smoke, and process until meat is the consistency of a pate, about 2 minutes.
  4. Use the kabob gun to skewer the meat, or, using damp hands, roll the meat into hotdog shaped rolls and place on a parchment lined baking sheet.
  5. Bake meat for 10 minutes, remove from oven and let rest while you prepare the dough and toppings.
  6. Line another baking pan with parchment paper and set aside.
  7. Mix the remaining dried minced onion, poppy seeds, sesame seeds, and celery salt in a small bowl.
  8. When meat is cool enough to handle cut each piece into 2 inch pieces.
    Increase oven temperature to 350°F.
  9. Don’t unroll the dough. Place it, rolled as when it came out of the package, and cut into 1/2 inch slices. Unroll each slice and cut it in the middle into 2 pieces.
  10. Place the meat slice about 1/2 an inch from the bottom of the dough slice and roll the dough around the meat as you roll the meat towards the top of the dough slice (like a sleeping bag!)
  11. Brush each piece with the beaten egg then sprinkle the poppy sesame mix over each piece.
  12. Bake for 12 to 14 minutes, until lightly browned or in an air fryer for 7 minutes at 325°F.
  13. Bites will keep frozen for up to 2 months. To reheat, place frozen bites in a preheated 350°F oven for 4 minutes.
