Leftover Steak with Beet and Arugula Grain Bowl

Don't let that mouthwatering leftover Pre steak go to waste! Transform it into a quick and nutritionally balanced grain bowl, ideal for a wholesome and convenient take-along lunch. The best part? You have the freedom to mix and match grains, vegetables, and fresh herbs to suit your taste preferences. Ingredients:

  • Sliced leftover prepared steak
  • 1 C prepared grain blend, cooked according to package directions and slightly cooled.
  • 1/3 C roasted golden beets, diced
  • 1/2 avocado, peeled and diced
  • 1/3 C cherry or grape tomatoes, sliced in half lengthwise
  • 1 T green onions, diced
  • 2 medium or 1 large basil leaf cut in to thin strips
  • 1 T toasted pine nuts
Sauce: 
  • 1/2 t kosher salt
  • 1/4 t ground black pepper
  • 1/2 t powdered sugar
  • 1/4 C rice wine vinegar (or any vinegar that you prefer)
  • 3/4 C good quality olive oil
    1. Combine all dressing ingredients except the olive oil in a jar wit a tight fitting lid. Shake vigorously to combine. Add the olive oil and shake again. Set aside while assembling the grain bowls. You will have extra dressing, remaining will store perfectly in the refrigerator for up to 2 weeks. Shake before using to emulsify the dressing.

    2. Toss 1 C prepared grains in a bowl with 1/4 C of emulsified dressing. Place grains in a shallow bowl and top with remaining ingredients. If desired, split the above between 2 bowls for 2 smaller portions.
