Harissa Tenderloin Roulade

Switch up your traditional beef tenderloin recipe with this harissa stuffed tenderloin roulade. You will make this more than once.

DIFFICULTY Hard

Ingredients:

  • 1 Pre Brands Beef Tenderloin Roast
  • 1 tbsp kosher salt
  • 1 tbsp high heat oil
  • 1/4-1/2 cup Harissa
  • Butcher's Twine
  1. Place the tenderloin on a cutting board. Lay vertically in front of you. With a boning knife or traditional Chef's knife, start at end furthest away from you and make shallow, smooth cuts about a 1/3 through the roast. Gently, unroll the beef as you cut.
  2. To make the final cut, face the blade in the opposite direction from your first cut and slice a 1/3 through the roast. Using shallow cuts, continue to unroll the roast. You should end up with a thin, butterflied roast.
  3. Spoon the harissa in an even layer on the inside of the roast.
  4. Roll the tenderloin, keeping as much harissa in the middle as possible.
  5. Place the rolled tenderloin vertically in front of you and cut a long piece of butcher's time. See the video below to reference how to tie the tenderloin to keep together while cooking.
  6. Heat a large skillet to medium-high heat. Add high-heat oil.
  7. Salt tenderloin on all sides and place in hot pan.
  8. Sear on all sides.
  9. Preheat oven to 400ºF.
  10. Roast tenderloin for 15-20 minutes or until the internal temperature reaches 135ºF.
