Hanukkah Glazed Carrots

Add a pop of color to your Holiday table with these easy glazed carrots. This traditional Hanukkah favorite can be prepared up to 2 hours in advance and reheated in a low oven or microwave.

Ingredients:

  • 2 pounds carrots, peeled and cut
  • 4 T butter
  • 1/4 C honey
  • 1 t salt, divided
  • 1/8 t white pepper
  • 1 T chopped fresh Italian parsley
  1. Cut each carrot in half crosswise then again lengthwise so you have 4 pieces from each carrot. Alternately, you can use whole baby carrots, peel and leave intact.
  2. Place carrots in a large saucepan, cover with water and add 1/2 t salt. Bring to a boil then reduce to a simmer until crisp tender about 7 minutes depending on the size of your carrots. Drain and transfer to a bowl.
  3. In the same pan melt the butter over low heat, add the honey and stir until combined.
  4. Add the carrots back to the pot and toss to coat. Cook carrots over low heat until warmed through, about 5 minutes, season with remaining salt and white pepper.
  5. Carrots can be made 2 hours ahead and reheated over low heat.
  6. Transfer cooked carrots to a serving dish and garnish with fresh parsley.
