
Hanukkah Glazed Carrots

Hanukkah Glazed Carrots
Add a pop of color to your Holiday table with these easy glazed carrots. This traditional Hanukkah favorite can be prepared up to 2 hours in advance and reheated in a low oven or microwave.
Ingredients:
- 2 pounds carrots, peeled and cut
- 4 T butter
- 1/4 C honey
- 1 t salt, divided
- 1/8 t white pepper
- 1 T chopped fresh Italian parsley
- Cut each carrot in half crosswise then again lengthwise so you have 4 pieces from each carrot. Alternately, you can use whole baby carrots, peel and leave intact.
- Place carrots in a large saucepan, cover with water and add 1/2 t salt. Bring to a boil then reduce to a simmer until crisp tender about 7 minutes depending on the size of your carrots. Drain and transfer to a bowl.
- In the same pan melt the butter over low heat, add the honey and stir until combined.
- Add the carrots back to the pot and toss to coat. Cook carrots over low heat until warmed through, about 5 minutes, season with remaining salt and white pepper.
- Carrots can be made 2 hours ahead and reheated over low heat.
- Transfer cooked carrots to a serving dish and garnish with fresh parsley.
