Ground Beef Tacos with Greek Yogurt
Cassava flour tortillas are gluten-free, grain-free and paleo-friendly. Stuff with Pre Lean Ground Beef and fresh toppings.
Ingredients
Taco Meat
- 1 lb. PRE ground beef
- 2 tbsp. butter (or ghee)
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 tbsp. lemon rind (minced)
- 1/2 tsp. cumin
- 1/2 tsp. paprika
Tortillas
- 3/4 cup cassava flour
- 1 tsp. paprika
- 1 tsp. oregano
- 1/4 tsp. salt
- 2 tbsp. olive oil
- 1/3 cup warm water
Toppings
- Full fat, plain Greek yogurt
- Lettuce (shredded)
- Tomatoes
- Cilantro
- Avocado
- Salt
- Pepper
- Lime
Instructions
- In a large skillet on medium-high heat, melt the butter. In the meantime, peel and mince the lemon rind. Add in the rind into the melted butter. Stir well.
- Add in the ground beef and all of the seasoning. Mix well. Cook, breaking the meat up until browned and crumbly. Once browned, the beef will release some liquid, keep cooking, stirring occasionally until the liquid has evaporated. Set aside.
- Make tortillas in a large bowl, and whisk together the flour, salt and seasoning. Mix in the oil and water and knead until dough forms. Shape six 2-inch balls. Use a tortilla press to flatten them, or flatten between two sheets of parchment paper using a small heavy pot to flatten each tortilla.
- Heat a cast-iron skillet on medium heat. Add 1-2 tortillas to the skillet and toast for 2 minutes each side. Use a spatula to remove and keep a paper towel over the warm tortillas to keep them soft.
- Fill tortillas with toppings, including a dollop of Greek yogurt. Enjoy!
