1 tbsp fresh rosemary, finely chopped + 4 whole sprigs for roasting and more for garnish
Whole fresh cranberries (optional garnish)
Heat oven to 400ºF. Grease a small baking dish.
Whisk egg in a bowl and add beef. Grate 6 cloves garlic into the bowl and add salt, pepper, and rosemary. Use your hands to gently combine and form 12 meatballs. Place in baking dish.
Place remaining garlic cloves and rosemary sprigs on and around meatballs. Cover with foil.
Bake for 20 minutes. Remove foil and use tongs to flip meatballs. Bake for another 10 minutes.
Allow cooling in the baking dish 5 minutes before plating. Serve with cocktail skewers.
