Filet Mignon with Roasted Rainbow Carrots

  • 1 PRE Filet Mignon steak
  • lemon pepper
  • olive oil
  • rainbow carrots
  • Greek yogurt
  • lemon juice
  • fresh dill


  1. Add olive oil to oven-safe pan. Season steak with lemon pepper and sear in pan for about four minutes per side, or to preferred doneness.
  2. Trim stems and quarter carrots. Cover in olive oil and lemon pepper, and bake on parchment paper or Silpat at 400F for about 25 minutes.
  3. Mix Greek yogurt, lemon juice and fresh dill. Use as dipping sauce.
  4. Enjoy!
