Filet Mignon Steak Waldorf Salad

Swap the roasted chicken for a Pre Filet Mignon in our take on the classic Waldorf salad. Make this delicious salad in 30 minutes or less.

Ingredients:

  • 1 Pre Filet Mignon Steak patted dry
  • 6 tbsp. Greek yogurt
  • 1 tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 cup water
  • Pinch of freshly ground black pepper
  • 2 sweet apples, cored and chopped
  • 1 cup red seedless grapes, sliced in half
  • 1 cup celery, thinly sliced
  • 1 cup walnuts, lightly toasted and chopped
  • 3 cups seasonal greens
  • 1/2 cup brown rice, chilled (You can also use quinoa or farro.)
  1. Preheat cast-iron skillet to medium-high.
  2. Salt and oil both sides of the steak. Use high heat oil for cooking.
  3. Sear the steak. Cook to your desired doneness. For medium-rare, cook until the internal temperature is 115º. Let rest for 7 minutes.
  4. In a medium-sized bowl, whisk together the yogurt, water, lemon juice, salt, and pepper. Stir in the apple, celery, grapes, and walnuts. Serve on a bed of fresh greens.
  5. Slice steak and place on top.
