Easy Mid-Week Taco Bombs
Are you looking for a super simple mid-week dinner recipe that is both kid AND mom approved (bonus points: it's also easy to prep and budget friendly too)!? Then these Easy Mid-Week Taco Bombs are for YOU!
Ingredients:
- 1 can of refrigerated biscuits; 8 count
- 1 lb of ground beef
- 1 package/envelope of your favorite taco seasoning
- Mexican or taco blend shredded cheese
- 2 tbsp butter (melted)
- dried parsley flakes, and additional seasonings as desired
- Make taco meat mixture; cook up ground beef over medium heat in a large skillet, breaking meat up as you go. Once meat is almost completely cooked/broken up, drain if necessary and add taco seasoning and 1/4 cup water to pan. Cook/mix adding more water as necessary until fully incorporated.
- Reduce heat to low and continue to cook/simmer for approx. 10 minutes.
- While meat mixture cooks, open up biscuits and separate them (8). Then, carefully cut each biscuit in half, so that you have a total of 16 halves.
- Once taco meat mixture is cooked through and saucy, remove from heat.
- Carefully spoon a small amount of the meat mixture onto the bottom halves of the taco bombs. Repeat until you have filled 8 biscuits (if you have extra taco meat mixture, save it for something else!).
- Sprinkle cheese over top of the meat mixture and then take the remaining 8 biscuit halves (tops) and carefully stretch them over top of the bottoms, pinching around the edges to seal. Then, re-shape the bombs as necessary so they are circular as shown.
- Melt butter, add in parsley and any other seasonings as desired and give the butter a good stir. Then carefully brush over top of the sealed biscuits.
- Cook taco bombs a couple at a time in air-fryer for approx. 8 minutes, or until lightly browned as shown.
- Enjoy immediately, serving with sour cream for dipping or salsa would be great too. Yum!
