Cheesy Beef Casserole

3 types of cheese make it extra creamy. Use gluten free egg noodles if desired.

  • 1 lb. PRE ground beef
  • 12 oz. tomato sauce
  • sea salt
  • black pepper
  • 8 oz. egg noodles
  • ½ cup sour cream
  • 1 ¼ cup cottage cheese
  • red pepper flakes
  • ½ cup green onions
  • 1 cup cheddar cheese (grated)


  1. Preheat oven to 350F. Cook ground beef in large skillet until browned. Drain fat and add twelve ounces of tomato sauce, a pinch of sea salt, and freshly ground black pepper. Stir well and let simmer.
  2. Cook eight ounces of egg noodles in boiling water until they are al dente, drain, then set aside.
  3. In a bowl, mix ½ cup sour cream and 1 ¼ cut cottage cheese, then sprinkle with red pepper flakes. Add to noodles and stir.
  4. Chop ½ cup green onions, add in to noodle mixture, and stir. Place half of the noodles in a baking dish and top with half the beef mixture. Sprinkle a layer of ½ cup grated sharp cheddar cheese. Repeat steps to make a second layer.
  5. Bake for approximately twenty minutes, or until all cheese is melted.
  6. Enjoy!
