Cheesy Beef Casserole
3 types of cheese make it extra creamy. Use gluten free egg noodles if desired.
Ingredients
- 1 lb. PRE ground beef
- 12 oz. tomato sauce
- sea salt
- black pepper
- 8 oz. egg noodles
- ½ cup sour cream
- 1 ¼ cup cottage cheese
- red pepper flakes
- ½ cup green onions
- 1 cup cheddar cheese (grated)
Instructions
- Preheat oven to 350F. Cook ground beef in large skillet until browned. Drain fat and add twelve ounces of tomato sauce, a pinch of sea salt, and freshly ground black pepper. Stir well and let simmer.
- Cook eight ounces of egg noodles in boiling water until they are al dente, drain, then set aside.
- In a bowl, mix ½ cup sour cream and 1 ¼ cut cottage cheese, then sprinkle with red pepper flakes. Add to noodles and stir.
- Chop ½ cup green onions, add in to noodle mixture, and stir. Place half of the noodles in a baking dish and top with half the beef mixture. Sprinkle a layer of ½ cup grated sharp cheddar cheese. Repeat steps to make a second layer.
- Bake for approximately twenty minutes, or until all cheese is melted.
