Breakfast Burger

1/3lb Pre burger topped with hollandaise eggs and a waffle bun. For those special mornings.

Ingredients

Burgers

    • 2 PRE 1/3 lb burger patties
    • 1 tsp. ground fennel seed
    • 1 tsp. Italian herbs
    • 1 tbsp. honey
    • 1 tsp. black pepper
    • 1/2 tsp. salt

Hollandaise

    • 3 egg yolks
    • 1 tbsp. lemon juice
    • 1 tbsp. water
    • 6 oz. melted butter (or ghee)
    • pinch of salt
    • 1/4 tsp. white pepper

Waffles

    • 2 cups all-purpose flour
    • 2 tsp. baking soda
    • 1 tbsp. sugar
    • 1/2 tsp. salt
    • 4 large eggs
    • 1 tbsp. melted coconut oil
    • 3/4 cup water

Other

  • 1 package bacon

    Other

    1. Cook bacon in skillet to desired crispiness. Drain some fat out of skillet, and save the rest by setting aside.

    Burgers

    1. Mix all of the ingredients together in a large bowl until thoroughly and evenly combined.
    2. Use skillet previously used for cooking bacon, heat on medium-high heat. Add in the beef patties. Cook for 5 minutes per side.

    Waffles

    1. In a bowl mix the flour, baking soda, sugar and salt. Whisk to combine. Make a large well in the center of the dry mix. Add in the eggs and use a hand mixer to beat the eggs until frothy.
    2. While beating eggs, add in the oil and then the water. Once the egg mix is fluffy and well combined, begin integrating the flour mix into the egg mix.
    3. Make waffles according to your waffle irons instructions, using ¼ cup of batter in the center of the iron to achieve round waffles.

    Hollandaise

    1. In a small sauce pot, whisk together the egg yolks, water and lemon juice until thick. Set the sauce pot on the stove and heat on low, and continue to whisk at a moderate pace until the eggs become frothy.
    2. Start adding the butter (or ghee) in a spoonful at a time, completely mixing in one spoonful before adding the next. If your eggs begin to cook, remove your skillet from the heat.
    3. Continue to whisk, adding in ghee or butter until the sauce is thick and smooth. Lastly whisk in salt and pepper.

    Final

    1. Fry egg to liking, and then place one waffle on your plate, stack with a burger, bacon, egg and a dollop of hollandaise. Top with a second waffle.
    2. Enjoy!
