Air Fryer Potato Puffs with Steak

This recipe calls for what looks like a lot of salt but it’s mostly in the cooking water which will be drained off. Like pasta, salting the cooking water is essential to the flavor in the final dish. If you don’t have an air fryer you can also make the puff in the oven, directions below.

Ingredients:

  • 1 Pre Brands Filet Mignon
  • 2 large russet potatoes, peeled and quartered
  • 1 T plus 2 t kosher salt, divided
  • 2 T all purpose flour
  • 1 t baking soda
  • 1 T dried onion flakes
  • 1 T dried parsley
  • 1/4 t black pepper
  • 1 t onion powder Sauce: 
  1. If using an air fryer preheat oven to 225°F. If baking preheat oven to 400°F.
  2. Fill a medium saucepan 3/4 full with cold water. Add potatoes and 1 T salt and bring to a boil over high heat. Reduce heat to medium high and keep the potatoes at a steady rolling boil. Cook for about 10 to 12 minutes, until potatoes are easily priced with a fork.
  3. Drain potatoes and return to pan. Allow to cool for about 15 minutes, they should be warm but cool enough to handle.
  4. Grate the potatoes on a box grater or in a food processor with the grating disc attachment. Combine the grated potatoes in a large bowl and gently mix in the remaining salt, flour, baking soda, onion flakes, parsley, pepper, and onion powder.
  5. With damp hands, scoop 2 heaping tablespoons of the potato mixture and shape it into a large tot. Place the tots on a parchment lined pan. Place pan of tots in the refrigerator for about 10 minutes, this will help dehydrate them a bit and make a crispier puff.
  6. Set your air fryer to 375°F (temperatures vary by brand so adjust accordingly). Spray the tots and basket insert lightly with cooking oil and place about half the tots in the cooking basket making sure not to crowd them. Air fry for 15 minutes, shaking the basket every 5 minutes. Remove cooked tots back to the tray and place in the warm oven. Repeat with remaining tots. Puffs are best served right away.
  7. To bake, place baking tray in oven and cook for 20 minutes, turning half way through.
  8. Cook your steak to your desired doneness and serve with the potato puffs.
