Mexican Breakfast Scramble

Everyone is trying to save time in the kitchen. A great way to do this is to use less ingredients! Your meals can still be amazing with 5 or less items, and you might already have them on hand. Can you add more ingredients? Of course, you can! Just get these basics down and then you can modify to fit your tastes. See below for 5 ingredient recipes for breakfast, lunch, and dinner.

Mexican Breakfast Scramble
Servings: 2

1/2 cup favorite salsa
2 eggs, whisked together
1/2 Pre New York Strip Steak, cut into thin, bite-sized strips and tossed in salt. 
1/2 avocado, sliced
fresh cilantro, torn

1. In a hot skillet, brown the new york strip on all sides until it has nice color. 
2. Keeping the skillet hot, pour in the whisked eggs and half of the salsa. Stirring constantly until the scrambled eggs form. Season with salt and pepper. 
3. Remove to a plate and top with other half of salsa, cilantro, and avocado. 

Gyro Lettuce Cups

Gyro Lettuce Cups
Servings: 2

1 Pre New York Strip, patted dry, cut into thin strips, and salted (remove the fat cap)
5-6 butter lettuce leaves
1/2 English cucumber, thinly sliced into half moons
1 Roma tomato, sliced into wedges
1/4 red onion, thinly sliced into strips
1/2 cup tzatziki sauce

1. In a hot skillet, brown the new york strip on all sides until it has nice color. Set aside. 
2. In the lettuce cups, assemble the goods: tzatziki first, steak, and vegetables. Feel free to top with some salt, pepper, even some extra oregano. Enjoy!

Pesto Grilled Steak and Zoodles

Pesto Steak and Zoodles
Servings: 2

1 Pre New York Strip, patted dry, cut into thin strips and salted
1 cup yellow cherry tomatoes, halved lengthwise
Zucchini noodles (a whole container of zucchini noodles or 3 zucchinis)
1/2 cup Gotham Greens pesto (or your favorite)
Olive OIl

1. In a hot skillet, brown the new york strip on all sides until it has nice color. Set aside. 
2. In the same skillet cook down the cherry tomatoes until starting to soften, add the zoodles and toss with the pesto. Cook for no more than 3-4 minutes. we don't want too much water extracted or else the noodles become soggy. 
3. Toss with steak and a glug of olive oil. Season with salt, pepper, and red pepper flakes. Enjoy!
