Welsh Rarebit Burgers combine a cheesy beer sauce—traditionally spooned over toasted bread—with ground beef patties for a sophisticated take on the classic burger. The stout and Worcestershire in the sauce cut through the fat of the beef while cheddar adds richness and umami. Finished under the broiler and topped with bacon, these burgers deliver the flavors of a pub meal in half an hour.

Welsh Rarebit Burgers Ingredients

 

  • 1 16-ounce package Pre 85% Lean Ground Beef

  • ½ small onion, finely diced

  • 2 tablespoons fresh parsley, finely chopped

  • ¼ teaspoon kosher salt

  • 1 eighth teaspoon black pepper

  • 2 tablespoons dry mustard, divided

  • 2 teaspoons neutral cooking oil

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon hot sauce

  • ¾ cup stout beer

  • 1 pound sharp cheddar cheese, shredded

  • 6 slices bacon, cooked

  • 3 pretzel rolls, lightly toasted

 

Instructions:

 

  1. Combine ground beef, onion, parsley, salt, pepper, and 1 tablespoon of dry mustard and form into 3 patties.

  2. Melt butter in a large saucepan over medium heat.

  3. Whisk in flour and cook until light brown, 3 minutes.

  4. Stir in Worcestershire sauce, remaining mustard, and hot sauce.

  5. Stir in stout beer and cook until thickened, 1 to 2 minutes.

  6. Lower heat and stir in cheese until smooth.

  7. Remove from heat and set aside while burgers cook.

  8. Position an oven rack in the upper third and preheat broiler to high.

  9. In a nonstick skillet, heat oil over medium-high heat.

  10. Add patties and cook for 3 minutes on each side.

  11. Reheat cheese sauce over low heat if it has become too stiff.

  12. On a parchment-lined baking sheet, place a patty on the bottom of each pretzel roll and top generously with cheese sauce.

  13. Place baking sheet in oven and broil for 1 to 2 minutes, until the cheese sauce begins to melt and bubble.

  14. Remove from oven and criss-cross 2 slices of bacon on each burger.

  15. Top Welsh Rarebit Burgers with bun and serve immediately.
