Grilled steak with sliced medium-rare pieces and seasoned fries on a white plate over a blue cloth background

Herbed ghee, bright lemon zest, and fresh thyme give this pan-seared ribeye a rich, buttery finish with a deeply browned crust. Basting in the skillet carries that flavor through every bite, while carrot and parsnip frites roast with warm spices alongside. Pre's 100% Grass-Fed & Finished ribeye brings clean, beefy flavor and natural marbling, and the ghee keeps the whole plate Whole30 friendly.

Total Time: 45 minutes

Servings: 2

Ghee Basted Ribeye Ingredients

  • 1 10-ounce Pre grass-fed ribeye steak

  • 2 large parsnips, peeled and sliced into batonnets

  • 2 large carrots, peeled and sliced into batonnets

  • High-heat cooking oil, as needed

  • 1 pinch of salt

  • 1 teaspoon cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon chili powder

  • 2 teaspoons smoked paprika

  • 1 teaspoon coriander

  • ¼ teaspoon cinnamon

  • ½ cup ghee

  • 2 tablespoons fresh parsley, minced

  • 1 teaspoon fresh thyme, minced

  • 1 clove of garlic, minced

  • Zest of 1 lemon

  • 2 lemon wedges

Instructions:

  1. Preheat oven to 425º F. Place carrot and parsnip sticks on sheet tray. Toss with oil to coat and sprinkle with salt, cumin, garlic powder, chili powder, smoked paprika, coriander, and cinnamon.

  2. Bake for 15 to 20 minutes, until vegetables are golden brown. Set aside.

  3. Make herbed ghee by mixing parsley, thyme, garlic, and lemon zest into ghee.

  4. Preheat skillet to medium-high and drizzle with oil.

  5. Season ribeye generously with salt on one side and place salted side down in heated skillet.

  6. Sear for 4 minutes. Season other side of steak with salt before flipping.

  7. Once flipped, cook for 1 minute, then add 1 tablespoon of herbed ghee to skillet.

  8. Tilt skillet so ghee pools on one side. Working carefully, baste steak away from body with a spoon for an additional 3 to 4 minutes, or until desired internal temperature is reached: 125-130º F for medium rare or 135-140º F for medium.

  9. Remove steak and let rest for 7 minutes. (Why: resting allows juices to redistribute, keeping the meat moist.)

  10. Serve ghee basted ribeye with seasoned frites and lemon wedges.
