Beef Linguine Ingredients
1 16-ounce package Pre 95% Lean Ground Beef
3 tablespoons butter, divided
1 teaspoon cooking oil
1½ teaspoons kosher salt, divided
6 cloves of garlic, minced
½ teaspoon Italian seasoning
2 cups low-sodium chicken stock
½ cup heavy cream
½ cup Parmesan cheese, freshly grated
8 ounces linguine, uncooked
1 cup grape tomatoes, halved
Fresh parsley, chopped (for serving)
½ cup panko breadcrumbs
Kosher salt and black pepper (to taste)
Instructions:
Brown ground beef in a skillet over medium heat, breaking it apart as it cooks. Season with 1 teaspoon salt. (Why: breaking ground beef into fine pieces ensures even browning and even distribution throughout the pasta.)
Melt 2 tablespoons butter in another pan over medium heat and cook minced garlic until fragrant, about 30 seconds. (Why: blooming garlic in butter releases its aromatic compounds, deepening flavor.)
Add remaining ½ teaspoon salt, chicken stock, cream, and uncooked pasta to the garlic butter, stirring to submerge the pasta in the liquid. Bring to a low simmer and cook on low, stirring occasionally, until pasta is tender and most of the liquid has been absorbed, about 10 minutes. Check frequently to ensure there is enough liquid; add more chicken stock as needed.
Melt 1 tablespoon remaining butter in a small nonstick pan over medium heat. Reduce heat to medium-low, add breadcrumbs, and toast until golden brown, about 5 to 6 minutes. Set aside.
Add the browned ground beef to the pasta and stir in Parmesan cheese and tomatoes. Season to taste with salt and black pepper.
Divide among four pasta bowls or plates, top with toasted breadcrumbs, and serve with fresh parsley and additional Parmesan cheese.
