We like consistency. Every time you buy a Pre steak, it has a consistent weight and thickness, so it cooks the same way every time. No surprises when you get it home.

Why we like consistency: a fixed weight and thickness
There is no drastic difference in thickness or weight every time you buy a Pre steak, so there are no surprises when you take it home and cook it. It cooks for the same time on each side every time. If you like a medium-rare middle, find the right timing for your stove and pan, and you will have your Pre steak recipe for life.

How we keep every steak consistent
We receive the sub-primal.* It arrives from New Zealand and Australia in its initial vacuum seal.
The butcher cuts it down. The beef comes out of the initial seal, and the butcher cuts it into 2 or 3 equal parts, depending on the size of the sub-primal.
We cut each steak to a specific weight and thickness.
A laser machine measures the size and density. Then it cuts the piece into consistent, individual steaks.
Each steak goes through our check-weigher. If a steak is overweight, the machine bumps it aside so we can trim it to size. If it is the right size, it goes into our vacuum-sealed packaging.
*A sub-primal is a smaller section of beef cut from the larger carcass. It is then cut into the smaller "secondary" or "portion" cuts we are used to seeing in grocery stores.
