Ribeye: the boldest steak
Pre Ribeye is a bold-tasting steak with the most intramuscular fat of all the cuts. That signature fat runs through the steak and gathers near the middle, including a very flavorful part called the spinalis, the long, finger-like piece that seems to be connected only to fat. Fat carries flavor, so our favorite way to use ribeye is rubbed, marinated, or plain with just a bit of salt.
Because there is a lot of fat throughout, it is not ideal for recipes that need sliced steak, like salads and tacos. It is also not the best choice for recipes that need tenderizing, like carne asada or rolled steak.
What should you use it for?
Eating it on its own.
Rubbing it with herbs or spices, or marinating it for 1 to 6 hours.
Petite sirloin: the most versatile steak
Pre Petite Sirloin is our most versatile cut, which is why you will find so many recipes that use sirloin. It is lean like the filet mignon, but it has a sturdier chew like the New York strip. It comes in a 2-pack of 5 oz steaks, so it is easy to use delicately in an appetizer, or to marinate for longer periods of time.
What should you use it for?
Strips for tacos, salads, or sandwiches.
With eggs.

Filet mignon: the most tender steak

New York strip: the classic
Pre New York Strip is a great cut, and not only because of its signature fat cap. It is a classic steak that is not too tough and not too buttery. It can be a little tricky to eat without a knife and fork, though. Picture taking a bite of a taco and having to tear the steak in half with your fingers because your teeth are not doing the job. No fun! To get more use out of this steak, slice it very thin and pound it into the size of strips you want.

Eating it on its own.
Pounded thin and used for rolled meat recipes.
Sliced into thin strips and tenderized for tacos or salads.
