The Two-Zone Grill Method: Fix 80% of Your Grilling Problems

You set your grill up the same way every time. Light everything, throw food on, hope for the best. The steaks burn outside and stay cold inside. The chicken's black on the bottom and pink in the middle. Welcome to single-zone grilling. It's why you're frustrated.

What Two-Zone Grilling Actually Is


Two-zone grilling means setting up two heat regions on your grill at the same time.


  • Direct zone: where the heat source is. 500F+ at the grate. Used for searing.

  • Indirect zone: where the heat source isn't. 250-350F ambient. Used for cooking through, holding food, melting cheese.


You sear on the direct side. You finish on the indirect side. That's it. One sentence. It will change your grilling forever.


How to Set It Up


Charcoal Kettle

Dump your lit coals onto one side of the kettle. Leave the other half empty. Close the lid. Direct zone is over the coals. Indirect zone is the empty side. Done.


Gas Grill

Light one burner on high. Leave the others off. Close the lid. Direct zone is over the lit burner. Indirect is everywhere else.


Pellet or Kamado

Pellet grills are mostly indirect by design. To get a true sear zone, you'll want a cast iron grate or a sear box. Kamados can be set up either way using a heat deflector for indirect.


When to Use Each Zone


Sear, Then Finish

Thick steaks (1.5 inch and up), pork chops, bone-in chicken. Sear hot for color and crust, then move to the indirect side and close the lid until the internal temp is right. This is the bread and butter of two-zone.


Slow Cook, Then Sear

Reverse sear. Start cold on the indirect side until the steak hits 110F. Move to direct for a 60-second sear per side. Best crust you'll get on a thick Pre Ribeye.


Hold Finished Food

Cooked but waiting for the rest of the meal? Park it on the indirect side with the lid closed. Holds at temperature without overcooking.


Melt and Toast

Cheese on a burger, buns to toast, side veggies to warm. Indirect side, lid closed. Couple minutes.


The Cold Side Is Where The Magic Happens


Most home cooks treat the indirect zone like a parking lot. It's actually where most of the cooking happens. The direct side is for color. The indirect side is for control.


Once you trust the cold side, you stop burning food. You stop flipping every 30 seconds. You stop guessing.

FAQ


Do I need a thermometer with two-zone grilling?

Yes. The whole point of two-zone is precision. An instant-read on the meat tells you when to move from direct to indirect or pull off entirely.


What if my grill is too small for two zones?

Most kettles 18 inches and up can do it. If your grill is smaller, you can fake it by sliding food to the edge of the grate where the heat is less direct.


Can I two-zone with a chimney starter?

Yes. Dump the chimney to one side, leave the other empty. Standard kettle setup.


How long does the direct zone stay hot?

Depends on coal volume. A full chimney holds high heat 30-45 minutes. Plenty for a steak dinner.
