Lemon Herb Marinade

Bright lemon, garlic and fresh herbs blend into a quick marinade that works well on New York Strip or other lean steak cuts. Keep the soak to 4 hours or less, since citrus breaks down the meat's surface quickly and can turn bitter if left too long.
Total Time: 10 minutes
Servings: Makes about 3/4 cup (enough for 1 steak)
Lemon Herb Marinade Ingredients
1 1/2 teaspoons salt, divided
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
5 cloves of garlic, mashed
1/4 cup fresh parsley, chopped
1 tablespoon fresh oregano, chopped
1/4 cup extra virgin olive oil
Instructions
Place 1 teaspoon salt and all ingredients except oil in bowl of mini food processor. Pulse to combine, then, with motor running, add oil in steady stream. Blend until emulsified.
Use marinade immediately, or refrigerate up to 2 days before marinating meat.
