Grilled Steak Nachos

These nachos are meant to be done from start to finish, on the grill! Use the leftover heat from cooking the steak to melt the cheese over the chips! Using a durable baking sheet will make this possible, and the clean up, very easy!

DIFFICULTY Easy

Ingredients:

  • 2 Pre NY Strip Steaks
  • 1 T ground cumin
  • 1 T chili powder
  • 4 heaping cups tortilla chips
  • 2 cups shredded cheddar
  • 1/4 cup diced tomato
  • 1/4 cup diced red onion
  • 1/4 cup sour cream
  • 1/4 cup cilantro
  • jalapeño, slices based on preference
  • 1 Lime, cut into wedges
  • salt & pepper to taste
  1. Preheat grill to high heat, scraping grates to clean and applying a small amount of cooking spray to season for a non-stick cook.
  2. While grill is heating, let PRE Beef sit at room temperature for about 20 minutes, then season each side liberally with ground cumin, chili, and salt and pepper.
  3. Grill steaks for 4 minutes per side, and remove and let rest for 10 minutes. While meat is resting, arrange a sheet tray with tortilla chips and sprinkle them with shredded cheese. Place tray on grill, turning heat to low, then close lid, and let cheese melt for 2-3 minutes.
  4. Cut steak into bite sized pieces, and remove tray from grill. Scatter steak over nachos, and top with diced tomato, onion, cilantro, slices of jalapeño, dollops of sour cream, and assorted lime wedges. Serve while hot!
