Sloppy Joe Grilled Cheese

What do you get when you combine two childhood favorites into 1? Total beef bliss. This recipe is not gluten free, dairy free, or grain free, but it's really good.  If you can't have one those things, substitutions are really easy to make.

PREP: 10 min. ACTIVE: 30 min. PASSIVE: DIFFICULTY Medium

Ingredients:

  • 1 Pre 85% Lean Ground Beef
  • 1 onion thinly sliced
  • 1 packet favorite sloppy joe mix (we used simply organic)
  • 1 cup shredded sharp cheddar
  • 1/4 cup triple cream brie
  • 2 tsp apple cider vinegar
  • 1 cup potato chips (we used sour cream and onion!)
  • 10 pieces thick-sliced Italian bread
  • 5 tbsp grass-fed butter, soft
  • 3 green onions, thinly sliced
  1. Preheat oven to 350º. Butter both sides of bread.
  2. In a large skillet over medium-high heat, crumble the ground beef and let cook for 2 minutes before stirring. This will help to give it some browned color. Then add the sloppy joe mix and stir until fully combined. Set aside.
  3. In the same pan, add 1 tsp of oil and sliced onions. Let cook until caramelized and then add the beef back in and give it a good stir. Set aside.
  4. In a single layer, toast bread on a parchment-lined baking sheet for 5-10 minutes in the oven
  5. Meanwhile: In a food processor, pulse together the cheddar, brie, and vinegar until it comes together in a ball. Might have to run it on low. it should be soft enough to spread. Set aside.
  6. Take the bread out of the oven and spread 1 side of all 10 pieces of bread with the cheese mixture and on 5 of them add 1/2 cup meat/onion. Leave the other side with just cheese. Place back into the oven for 10 minutes or until the cheese is melty. Take out of the oven.
  7. Place a sprinkle of green onion on top of the meat and then a handful of potato chips.
  8. Smoosh both sides of the sandwich together and serve immediately or heat again with a bit more butter on top.
