4 medium or 3 large sweet potatoes, peeled and cut in to 2” pieces
1 large sweet onion, peeled, quartered and sliced in to 1” pieces
1/4 C fresh sage leaves, stems removed and julienned in to thin strips (stack and rolls the leaves from bottom to top, then use a sharp knife to slice cross-wise)
2 T olive oil
1/2 t salt
Pinch white pepper
1 T butter, melted
Preheat oven to 425°F.
Place sweet potatoes, sliced onions, sage, olive oil, salt and pepper in a large bowl and toss to combine.
Transfer in a single layer to a parchment lined baking tray.
Bake in oven for 30 minutes, shaking the pan every 10 minutes.
Remove from oven and transfer to a serving dish and drizzle with the melted butter.
